we have a level with collision, a simplistic driving model and camera, and a rudimentary gui implemented.

See, I can see myself being happier spending 20 bucks on this game than on a lot of the games currently out. It's just totally awesome, and if you can make it Mac compatible, you'd even have yourself a niche there maybe worth exploring. Especially if both Mac and PC users can play together.

Do these rocks already have a normalmap? because they look very flat and a good normal map could help a lot (see TF2).

no, there is actually no lighting being done on the scene, so a normal map wouldn't do much unless we decided to add lighting into the calculation. Right now everything is baked vertex colors for speed.

Rim lighting looks to strong imo... but its definitly nice. I'd suggest you increase the contrast of the textures a bit, reduce the rim lighting a little and make the rim lighting a little colored.

Yeah, at the moment it gives a frosty glowy look, which looked fine on the snow map. But it doesn't fit as well with that theme imo.
