AlexM Posted January 26, 2014 Report Posted January 26, 2014 I think I need a couple more tries before I can be sure. I've had similar problems. I used to try to make fries with them. Does not work. Right now I cut them into maybe 2cm cubes, put them in a bowl with oil and toss them until they are lightly covered. Put them on the pan then season them on the pan. The thing I noticed with doing sweet potatoes in the oven is there's like this small 2 min period between them being undercooked and burnt to a crisp. I still tend to overcook If I figure it out I'll let you know dux 1 Quote
blackdog Posted January 27, 2014 Author Report Posted January 27, 2014 Are you covering the potatoes to maintain some moisture? ~ Potato and asparagus cream soup Sentura and AlexM 2 Quote
AlexM Posted January 27, 2014 Report Posted January 27, 2014 I"m not covering them because I do want the caramelized, hardened corners. Like I would do regular potatoes. Should I cover them for a portion of the time? Quote
blackdog Posted January 27, 2014 Author Report Posted January 27, 2014 I don't cook sweet potatoes, but from what you wrote, i'd try covering for the final part of the process and see what happens.Alternatively, could try to put a small water container in the oven, not sure it can help though. RaVaGe Posted January 28, 2014 Report Posted January 28, 2014 (edited) Dux for your fucking potatoes, cook them twice, fry them in a fryer until they start to get some colors, don't wait too much, you don't want to fry them at first, then take them out and put that shit on a paper towel, wait a moment to let them chill and cool down, then put them back in the fryer, I'm a belgian, I know my shit about fries Or simply take a pan and fry them, don't use too much oil though. KoKo5oVaR Posted January 28, 2014 Report Posted January 28, 2014 A cool thing i tried with potatoes which is pretty simple and usually gave me good results is to cut them in two from bottom to top (keep the peel) Get them into water to wash away the starch Have some butter warming up in a pan, and dip the flat side of the potatoes into the butter Then you could put some stuff over it, usually i put herbs and peper Then you put them in the oven on cooking paper 180°C ~ 40 mins and you should have something like this : Pretty awesome with roasted meat and a lot of sauce This thread is just too cute Sentura, RaVaGe and knj 3 Quote
knj Posted January 28, 2014 Report Posted January 28, 2014 Late dinner, chicken, baked fries and green beans doesn't look too good either, but I aim for time and taste AlexM 1 Quote
RaVaGe Posted January 28, 2014 Report Posted January 28, 2014 Oh yeah also, don't forget to wash the potatoes, actually I let them chill in the water for 10 minutes. And it won't work if you try to fry a big ass potatoes, it works for some small cubes or sticks, but not for a half potatoes, it would probably blow up in the oil, the hoven is also a good technique, put some cheese/ham on it too, but you can't fry them that much.
