Dead-ends in a DM map is a big no-no unless there's something of a LOT of value in there, as they just get spammed to shit.

Would you consider an office level to go towards a portfolio for an environment artist, or should i scrap this idea and move on to an outdoor environment which maybe better. What are your thoughts?

If you are building a portfolio, then you want a variety of settings in my opinion. You are not only trying to demonstrate that you are capable of making great looking environments, but also a wide range of environments.
